The farm and the adjoining dairy are located in Villar Perosa. During the summer period, the activity moves completely to the Selleries alpine pasture located at an altitude of over two thousand meters, in the magnificent landscape of the Orsiera-Rocciavrè Natural Park. The alpine pasture is one of the highest in Val Chisone: the 35/40 lactating cows of the Montbéliarde breed, grazing from mid-June to the end of September, are able to produce such a quantity of milk as to allow the cheesemaking of over 700 forms of Plaisentif per season, in addition to other cheeses.
